Balsamic Glazed Salmon with Strawberry Salsa

Ingredients

For the Strawberry Salsa:
·1.5 cups diced strawberries
·1/4 cup cilantro
·1 tablespoon diced jalapeño
·2 tablespoons diced green onion
·2 teaspoons lime juice
·Salt and pepper, to taste

For the Salmon:
·1.5 pound wild salmon fillet
·1/4 cup balsamic vinegar

Directions

Preheat oven to 375°F For the Strawberry Salsa, combine strawberries, cilantro, jalapeño, green onion, and lime juice in a medium bowl. Add salt and pepper to taste. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper. Bake for 15-20 minutes, or until cooked through. Once salmon is cooked, brush a bit more balsamic vinegar over the top. Top salmon w/ strawberry salsa. Then, serve and enjoy!
